8 tablespoons unsalted butter, softened
2 tablespoons pale dry sherry
4 teaspoons strained fresh lemon juice
4 teaspoons finely grated onion
1/2 teaspoon dry mustard
1/2 teaspoon ground hot red pepper (cayenne )
2 teaspoon salt
1/2 teaspoon ground white pepper
Drop the shrimp into enough boiling water to immerse them completely and boil briskly, uncovered, for 3 minutes, or until they are firm and pink. Drain the shrimp, spread them on paper towels and pat them completely dry with fresh towels. Then put the shrimp through the finest blade of a food grinder. If you lack a food grinder, chop the shrimp as fine as possible and pound them to a smooth paste with a mortar and pestle or in a bowl with the back of a spoon.
In a deep bowl, cream the butter by beating and mashing it against the sides of the bowl with the back of a wooden spoon until it is light and fluffy. Beat in the sherry, lemon juice, onion, mace, mustard, red pepper, salt and white pepper. When thoroughly incorporated, add the shrimp and continue to beat until the mixture is smooth. Taste for seasoning.
Transfer the shrimp paste to a 3-cup serving bowl or mold, spreading it and smoothing the top with a spatula. Cover with foil or plastic wrap and refrigerate for at least 4 hours, or until the paste is firm to the touch.
Serve the paste directly from the bowl, or unmold it in the following fashion: Run a thin-bladed knife around the edges of the mold to loosen it and dip the bottom in hot water. Place an inverted serving plate over the bowl and, grasping plate and bowl together firmly, turn them over. Rap the plate on a table and the shrimp paste should slide out easily.
In Charleston, shrimp paste is traditionally served for breakfast or with wafers or crackers as an accompaniment for drinks.
